Food for Thought

Last weekend we had our basket pick-up for the produce co-op.  It was full of such yummy stuff, just take a look...

There was oranges, apples, apricots, bell peppers, spinach, red potatoes, jalepenos, zucchini, and my all-time favorites of kale, beets, and tomatillos.  Delicious!

First up was kale chips.  I was so excited.  I just wash, dry & chop the kale.  Season with salt, pepper and grapeseed oil, pop in the oven for a few minutes and enjoy!
And I have a partner in crime who enjoys kale just as much as I do...

I did use some of the kale to make some delicious soup, which is my version of Olive Garden's zuppa toscana...

Since Connor doesn't like this soup, he requested 'green soup', which to his surprise is broccoli & cheese soup....through a straw, of course...


And then to use the tomatillos, I had to make some green enchiladas...

They were delicious!  And then, with the left-overs, made some delicious tostadas..

Love the delicious fresh fruits & veggies !!!

Connor's Birthday Party

Connor had a great birthday party.  Thanks to all our wonderful friends for celebrating with us.  So fun.  And Connor had a blast.  Although he was a little impatient waiting for cake, ice cream, and presents.  Haha.  But that is to be expected.

And he picked out his cake months ago from Costco...

To end the night, the boys picked out some dino tattoos...

What a fun birthday party!

And today on his actual birthday, he got donuts & a smoothie for breakfast, hot dogs at the dino museum for lunch, and pizza for dinner.  Yup, it sure was his day.  So cute, but he loved it and couldn't be happier.  We love you Connor!

Happy 4th Birthday Connor!

How can it be that Connor is already four years old?!?

I feel like it was just a year ago that I was 9+ months pregnant with him and SO ready for his arrival into this world.  How has it been 4 years???  He is such a fun, loving, extremely smart, handsome little man.  And I wouldn't change anything about it...except maybe be less of a picky eater, less stubborn, and listen to me always instead of just sometimes.  But really, I love him just the same! He loves to help me in the kitchen, especially if it involves making dough of any kind (he loves to sneak bites), he loves to draw pictures (mainly of dinos), and he has crossed over and become even more obsessed with dinos than I ever thought possible.  Again, wouldn't change a thing, except to maybe give myself a day break every now & then from having to pronounce words like Parasaurolophus, Euoplocephalus, Pachycephalosaurus, and Heterodontosaurus. 

Connor has grown by leaps and bounds this past year in learning how to write his name all by himself and becoming more self-sufficient, wanting to learn how to read, and being a wonderful big brother.

Happy Birthday to our little man.  We love you very much and brighten each and every day of our lives.  Happy 4th Birthday Connor!
